Using a humane High Pressure Processing (HPP) method—one of only two endorsed by both PETA and WWF—our lobsters are gently, expertly prepared to preserve their sweetness and deliver fork-tender perfection every time. Then we do something few others dare: we remove the claws, clean the body cavity, and return the half tail, claw, and knuckle meat back into a beautifully split shell. It’s elegant. It’s indulgent. How To Prepare Atlantic Lobster?
Pierce the vacuum seal and thaw overnight in the fridge. From there, it’s showtime: grill, bake, or broil the split shell to golden, bubbling brilliance. Want to elevate it even further? Remove the meat and butter poach it until just done—then layer it into lobster Thermidor, tuck it into risotto, or build the world’s most decadent roll.
