Ask a chef to describe a Spot Prawn and they will bypass the word "shrimp" entirely. They reach for words usually reserved for lobster or Dungeness crab like sweet, firm, meaty, and succulent.

Spot Prawns possess a natural flavour and a dense, satisfying texture that rivals lobster. They aren’t delicate or fussy. They are bold, generous, and unmistakably West Coast. Their character comes directly from the cold waters of the Pacific, a pristine environment that produces a rare protein.

A Remarkable Biological Story

The Spot Prawn (Pandalus platyceros) is as fascinating as it is delicious. They are a hermaphroditic species, beginning their four-year life cycle as males before transitioning to females for their final two years.

The fishery is subject to the most rigorous biological sampling in North America. Populations are monitored with surgical precision to ensure a sufficient number of egg-bearing females remain to maintain the stock. In BC, sustainability isn't a marketing claim, it is a biological imperative.
