Is your salmon fresh or frozen?
Better than fresh. "Fresh" salmon at the counter is often days off the boat and previously frozen anyway. Ours is flash-frozen within hours of the catch, locking in flavour and omega-3s — thaw it the night before and it cooks up like the day it left the water.
