The steak of the sea

Why Canada’s Best Chefs Wait For Halibut

There are dozens of white fish. Only one is called the steak of the sea. Wild Pacific halibut combines the sweetness of crab, the flake of cod and the firmness of a premium steak.

Ours is caught one fish at a time by independent British Columbia fishermen, carefully processed in our own facility and frozen while still at its absolute best. That’s why chefs buy it. Now you can too. One bite explains why halibut has been the benchmark for white fish for generations.

The honest price of quality

Why Is Halibut More Expensive?

Because it isn’t just another white fish. Pacific halibut grows slowly. Lives for decades. Every fish is caught individually by hand. Processed by hand. And because it’s so lean, timing matters. Freeze it at its peak and it’s extraordinary. Leave it sitting in a display case for four days and you’ll never know what great halibut tastes like.

How To Cook Halibut

Butter. Salt. Pepper. Four minutes per side. Done. That’s all great halibut asks of you.

The chef’s safe bet

Why Chefs Love Halibut

Halibut is the filet mignon of seafood.

Lean without being dry. Firm without being tough. Rich enough to satisfy. Delicate enough to pair with almost anything. It’s the fish chefs order when they don’t want to take chances.

From the Wheelhouse

When people ask me what fish impresses chefs the most, they expect me to say salmon. Sometimes I do. But more often than not, it’s halibut. Not because it’s flashy. Because it’s dependable. Every chef knows that if the halibut is exceptional, dinner is halfway won before the stove is turned on. That’s why we treat every fish with so much care. It comes aboard one at a time. Handled individually. Processed in-house. Frozen immediately while it’s still in peak condition. The result is the same halibut we’ve supplied to Canada’s finest restaurants for years. The only difference is now it’s arriving at your front door.

The old ways

One Fish. One Hook. One Fisherman.

Pacific halibut isn’t harvested in giant schools. Every fish is caught individually. One hook. One line. One fisherman. It’s slower. Harder. More expensive. It’s also why Pacific halibut remains one of the world’s best-managed fisheries. Sometimes the old ways really are the better ways.

Frozen halibut, answered

Is frozen halibut as good as fresh halibut?

Better, when it’s done right. Searching for fresh halibut? Our wild halibut is flash-frozen at the peak of the catch, locking in texture and flavour the moment it’s at its best — while the “fresh” fish at most counters has been thawed and sitting for days. Frozen-at-the-peak halibut is the fresher choice. Just thaw it overnight in the fridge before you cook.

Where does your wild halibut come from?

Wild Pacific halibut, caught in British Columbia by small-boat fishers working hook-and-line under International Pacific Halibut Commission quota. Never farmed, never trawled — fully traceable back to the fishery.

How do you ship halibut across Canada?

We ship frozen halibut coast to coast — insulated packaging keeps it frozen solid in transit, so the same peak-of-catch quality lands at your door in Vancouver, Toronto, Calgary and beyond.

What’s the difference between the portions and the value packs?

The single Wild Halibut Portion is 6 oz, skin-off and boneless — perfect to try. The White Pack is seven of those halibut portions for stocking the freezer. The Red & White Pack mixes four wild halibut portions with four wild sockeye salmon portions, for cooks who want both the white and the red catch.

How do I cook wild halibut?

Halibut is lean, so the only rule is don’t overcook it. Pat it dry, season simply, and sear in a hot pan with butter, bake at 400°F for about 10–12 minutes, or grill skin-side down. Pull it the moment the flesh turns opaque and flakes — around 130–135°F internal.

Can I buy halibut without a subscription?

Yes. This is a one-time purchase — buy halibut online, check out, done. If you’d rather have wild seafood arrive on repeat, you can start a Standing Order later, but there’s no membership and no commitment to order today.

Is it really wild and sustainable?

Always. Every portion is wild Pacific halibut, caught under quota by our own fishing families, fully traceable and sustainably harvested — never farmed.
