How do I cook wild halibut?

Halibut is lean, so the only rule is don’t overcook it. Pat it dry, season simply, and sear in a hot pan with butter, bake at 400°F for about 10–12 minutes, or grill skin-side down. Pull it the moment the flesh turns opaque and flakes — around 130–135°F internal.
